Vanilla Collagen Pudding Shots

I made these vanilla collagen pudding shots using NuNaturals Organic Stevia and Monkfruit Sweetener, Pourable Vanilla Syrup and Collagen Peptides.

Vanilla Collagen Pudding Shots
Serves: 6
Ingredients:
2 Cups Unsweetened Vanilla Almond Milk
1/2 Cup Unsweetened Vanilla Almond Milk mixed with 3 TBSP Cornstarch
4 Egg Yolks, lightly whisked
1/4 tsp Salt
3/4 tsp Pure Vanilla Extract
5 Packets NuNaturals Organic Stevia and Monkfruit Sweetener (or equivalent to 1/4 cup sugar)
2 Tbsp NuNaturals Collagen Peptides
Directions:
Heat the 2 cups milk of almond milk in a saucepan.
Meanwhile, whisk cornstarch and the 1/2 cup milk until dissolved.
When milk is warm, add cornstarch mixture and egg yolks, stirring constantly and bring to a boil. Once boiling, stir constantly ~3 minutes. Lower to simmer and simmer a few minutes. Turn off heat.
Stir in the remaining ingredients, then let cool completely. Refrigerate a few hours, uncovered, where it will get much thicker.
